Type of composting solution:

Torridon Hotel operate a Rocket composter for the composting of all the food waste they generate on site.

Scale:

The system is a 215 litre vessel (25 tonnes per annum) and manages all food waste generated on site with potential to accept additional waste if this were required.

Input material:

The input material is food waste, plate scrapings and anything organic that can go in. The system has operated for a year at the time of writing and has been very reliable but the input has to be managed carefully for quality control – there is a level of planning required for proper use of the unit. The composting system is managed and maintained by the estate team working with the head chef.

End use:

The compost generated is use in the hotel grounds, they no longer need to buy as much compost.

Partners/ collaborators:

There are no other collaborators in the project – the hotel bought the Rocket for their own use. They would however be open to wider collaboration with the community as they have capacity to take additional material. This would need to be on the basis that the community collected the food waste and brought it to the hotel in bulk.

Price:

£25,000 investment made by the hotel.

Main motivator:

The hotel has always composted at a small scale they bought the Rocket to improve the quality and quantity of compost they derive.

Summary

A Rocket composter is used for all of the food waste generated by the hotel. This cost £25,000 to install and now results in the hotel not needing to purchase as much compost for use on the grounds. It is managed and maintained by the estate team working with the head chef and there is spare capacity for the community to get involved in the future.
